Ingredients:
- 4 Filet mignon
- 1 tbsp olive oil
- 1/2 cup swiss cheese
- 1 small onion sliced thinly
- 1 tbsp butter
- 1 tsp garlic minced
- Salt and pepper to taste
- 1 tsp parsley
Directions:
Preheat oven to broil. Heat olive oil to medium-high and sear each side. Meanwhile, heat butter in saucepan and sautee onion and garlic for 5-6 minutes and add parsley. Place filet mignon on a baking sheet and put onion mixture on top of each filet and cover with swiss cheese. Broil filet mignon steaks for 5-7 minutes until cheese is bubbling and browning. Serve with baguette and garlic, butter spread.

Ingredients:
- 4 Filet mignon
- 1 tbsp olive oil
- 1/2 cup capers
- 1/4 cup red wine
- 4 tbsp brown sugar
- 1 tsp tarragon
- 1 tsp basil
Directions:
Preheat grill to medium-high heat. Sear each side of filet mignon to trap in the juices. Reduce heat to medium and continue to grill for 3-4 minutes until desired doneness. Meanwhile, in a saucepan, heat olive oil to medium and saute capers. Add red wine, brown sugar, tarragon and basil until thickened. Serve with twice baked potato and favorite vegetable.

Ingredients:
- 4 Filet mignon
- 1/4 cup frozen spinach - thawed
- 1/4 cup cream cheese
- 4 tbsp parmesean cheese
- 4 tbsp romano cheese
- 1/4 cup mozzarella cheese
- 1 tsp garlic minced
Directions:
Preheat grill to medium-high heat. Sear each side of filet mignon to trap in the juices. In a mixing bowl, combine frozen spinach, cream cheese, parmsean cheese, romano cheese, and garlic. Slice 2 inch slit into each filet mignon and stuff spinach cheese mixture into crack and top with mozzarella cheese. Reduce heat to medium and continue to grill for 3-4 minutes until desired doneness. Serve with brown rice and favorite vegetable.

- 2 Filet mignon
- 2 tbsp black peppercorn cracked
- 1 tbsp rosemary
- 1 tbsp sage
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 cup olive oil
Directions:
Preheat grill to medium-high heat. In a small bowl, mix together the oil, peppercorn, rosemary, sage, garlic powder, onion powder, and salt. Rub pepper mixture on both sides of filet mignon and sear each side of filet mignon to trap in the juices. Reduce heat to medium and continue to grill for 3-4 minutes until desired doneness. Serve with green bean casserole and red skin potatoes.
