Scallop Stuffed Fillet Mignon

Ingredients:
- 2 Fillet Mignon
- 8 small scallops
- 2 clove garlic minced
- 2 slices bacon

Directions:
Preheat oven to broil.  In a small saucepan, melt 1 tbsp butter and saute the scallops and garlic until browned.  Slice each fillet mignon creating a pocket.  Fill each pocket with scallops and seal shut using toothpicks.  Wrap each fillet mignon with bacon and place in the oven to broil for 5-7 minutes per side. 

Spicy Filet Mignon

Ingredients:
- 4 Filet mignon
- 1 tbsp olive oil
- 1 tbsp worchestershire sauce
- 1 tbsp basil
- 1 tbsp onion powder
- 1 tsp cayenne pepper
- 1 tbsp tarragon
- 1 tbsp thyme

Directions:
Preheat grill to medium-high heat.  In mixing bowl, combine olive oil, worchestershire sauce, basil, onion powder, cayenne pepper, tarragon and thyme.  Rub each filet mignon with herb mixture and place on grill to sear each side of filet mignon.  Reduce heat to medium and continue to grill for 3-4 minutes until desired doneness.
